Game Classes

We are happy to be continuing our classes in partnership with Ft. Atkinson State Historical Park. These classes can be taken individually for $45 per person per class or save a few bucks (sorry, had to say it) and sign up with a friend for $80. Register and pay online below. All of our classes can also be taken privately if you prefer to learn in small completely hands-0n situations. Cost is $175 total for a group of up to 4 people and class can even be held right at your house (no extra charge).

Deer Sausage Making - Jan. 21st

Skip the butcher this year and take the deer from field to table yourself. This class will cover all the basic tips and techniques that will help in all game (deer, pheasant, goose etc. ) and non-game (pork, beef, etc.) sausages. The goal is that you leave the class with a true understanding of the craft, techniques and science of sausage making, so you can make all your sausages without having to buy pre-made mixes. We will make 3 different sausages that use a variety of traditional methods: deer brats (fresh and poached/smoked), deer summer sausage, snack sticks and even venison breakfast sausage. We will use natural, collagen and fibrous casings. Snacks and recipes provided.

Cooking great venison dishes at home is not rocket science, but it isn't exactly the same as cooking beef or pork either. Using fresh venison, we will explore several techniques from slow cooking, to hot smoking, to quick searing and more that can be used for the tenderest and toughest cuts alike. Specifically, we will make venison schnitzel, smoked venison roast and even corned deer. And to round things out, we will cover a few traditional and complimentary sauces too.

Expand your game bird recipe repertoire while learning the basics of brining, roasting, smoking and even a little sausage making. We will work with pheasant, duck, goose and wild turkey, but the techniques can be used for chicken and domestic turkeys too.
