Boneless dry-cured hams made with local heritage breed pork: Berkshire, Duroc and even some Mangalitsa.
We use our traditional dry-curing and cold-smoking to craft a ham with remarkable flavor and texture. These are real, traditional hams like your great-grandparents enjoyed. All hams are boneless and finished with hot smoking, so they are fully-cooked and can be enjoyed sliced right out of the package or warmed in the oven.
Cost is $8 per lb. for Berkshire and Duroc. Mangalitsa costs me a little more and they are glazed with locally-made maple syrup.
The large hams are about 4.5-5.5 lbs. The medium 3.5-4 lbs. And the small ones are about 2 lbs.
