Starting with suburb local chickens from Plum Creek Farms, we brine the whole birds with sea salt, a little lemon, garlic and rosemary along with a touch of brown sugar. They are then smoked over a real fire of applewood. Chickens are smoked, but not cooked. This means that you can simply cook them just like you would normally cook your chicken or turkey. All the birds are about 3-4 lbs.
