Chicken does not have to be the ugly step-sister of the grill. Learn some tips, tricks and techniques to make grilled chicken more Cinderella than step-sister. Specifically, we will learn how to brine chicken by making succulent Chinese Red Glazed Chicken Legs. Then some quick Chicken and Shrimp Satay with Grilled Peach Salsa (photo). Then we will finish with BBQ chicken thighs that start in the oven and finish with hot smoking on the grill. Thighs will be dressed with a class South Carolina-style mustard BBQ sauce.
