It is not rocket science to grill a great sausage that is crisp on the outside but still succulent in the inside. However there are some tips and tricks that will make it easy and foolproof. We will focus on technique and temperatures. First up will be brats braised in caramelized beer onions and then seared on the grill to finish. Next will be kielbasa first cooked on the grill over indirect heat/smoke and then finished in skillet over direct heat right on the grill. We will use the kielbasa to make a spinach salad with mustard and horseradish dressing. Lastly, we will make Italian sausage sliders. We will poach Italian sausage patties in spicy marinara sauce and then char them on the grill topped with a pat of fresh mozzarella before serving on a soft bun with fresh basil.
