Boneless dry-cured hams made with local, all-natural, heritage breed Berkshire pork.
We use our traditional dry-curing and cold-smoking to craft a ham with remarkable flavor and texture. These are real, traditional hams like your great-grandparents enjoyed. All hams are boneless and finished with hot smoking, so they are fully-cooked and can be enjoyed sliced right out of the package or warmed in the oven.
Cost is $8 per lb. Each full Berkshire leg ends up making 3 boneless hams of different sizes. The large hams are about 4.5-5 lbs. The medium 3.5-4 lbs. And the small ones are about 1.5-2 lbs.
Some hams are already finished and packed and more are curing. After you make a reservation (see form at right), you will receive an email or call when your ham(s) are ready to pick-up.
