These are local beyond-Prime American Wagyu (Wagyu - Angus cross) Top Sirloin Filet Roasts. We seam out the tenderest portion of a top sirloin. They are a great alternative to more expensive tenderloin. Maybe slightly less tender than a tenderloin (though still very tender), but they have much more beef flavor.
