These are from local Prime American Wagyu (Wagyu - Angus cross). Comes unseasoned and unsalted, but cut and tied. Bones are cut off but then tied back on. This makes for great roasting while cooking, but then very easy slicing after. A 1/2 rack weighs about 10 lbs. and can feed about 8-10 people. And a 1/3 rack weighs about 6 lbs. and can feed about 4-6 people.
