These are local Prime American Wagyu (Wagyu - Angus cross). Superb alternative to Prime Rib. The chuck roast is the front portion of the loin/shouder that is directly in-front of the loin section used for “Prime Rib”. Same flavor and marbeling, but more than $10 less per lb. and higher yield from being boneless. Cook how you like, but we recommend 500 F. for 30 minutes. Turn the oven off and leave the door closed for another 45-60 minutes. (More detailed recipe available when you pick-up).
