These are from local American Wagyu (Wagyu - Angus cross). Comes unseasoned and unsalted, but cut & tied. Bones are cut off but then tied back on. This makes for great roasting while cooking, but then very easy slicing after. A whole rack weighs about 18-20 lbs. and can feed 15—20 people. A 1/2 rack weighs about 8-10 lbs. and can feed about 8-10 people. And a 1/3 rack weighs about 4-7 lbs. and can feed about 4-6 people.
