Made from local beyond-Prime American Wagyu bottom round. Dry-cured with our house rub for 2 weeks and then cooked sous vide very low & slow for 48 hours until perfectly tender then cold-smoked over oak. Ready to eat. Can be enjoyed cold or hot, but at their very best when warmed up.
